The feature event at BIRCH [IN THE HIGHLANDS] event program is the launch event

To be held at Birch Restaurant at 6.00 for 6.30pm Thursday 11th August [this dinner event kicks off the entire Birch [In the Highlands] event program] and will be a seven course dinner curated and created by these leading chefs of the Southern Highlands.

The ultimate Highlands chef collaboration featuring Executive Chefs:

who will join forces to create an extravagant degustation-style dinner that showcases what they adore most about the Southern Highlands.


Tickets // includes 7 course dinner and full wine pairing or non-alcoholic pairing for each course // $285 per person

This dinner will be the only event that additional tickets will be available for [everything else in the BIRCH [IN THE HIGHLANDS] weekend is only available to VIP guests]. 

T+C’s // tickets to this event are required to paid in full at the time of purchasing. Refunds can be provided for cancellations up to 12 days prior to the event time [minus a $45 per ticket admin fee per ticket]. No refunds can be issued for cancellations within 12 days of the event start time [this includes cancellations due to contracting Covid-19 or mandated isolation requirements]. Unfortunately due to the ordering requirements for this event we can not sustain costs incurred due to late cancellations. If you can not come within 12 days of the event start time, your ticket can be transferred to another person so as not wasted (this is the responsibility of the ticket holder). ALL DIETARY PREFERENCES are to be provided at the time of booking, please add details about these to the booking notes at the check-out [the ability to cater to dietary preferences at the time of this event will not be possible]. Current covid conditions of entry will apply and/or otherwise outlined and required by Birch. Covid-related concerns will be monitored and decisions regarding safety communicated to participants, if required, in the lead-up to the events.

Wine, non-alcohol and combo pairing

Is included in the ticket price. We request that you indicate which option you would prefer for all guests booked so we can be certain prep and service is planned accordingly.

Dietary preferences

We request ALL dietary preferences be outlined at the time of purchasing your ticekts. As this dinner is a collaboration between three chefs, will be prepped in different locations knowing these preferences is critical to us providing every diner with the best experience possible. We will NOT be able to accommodater preferences made known to us at the time of the event.
