THE BIRCH TEAM … contains a group of like-minded, determined, experienced and passionate people that share and contribute to the vision and essence of Birch, and most importantly, are driven to deliver this to every guest.

Owned and managed by Glenn and Renée Wallace, a dynamic duo whose combined management experience – as well as Renee’s service, hospitality, marketing, design, promotion and branding experience – drives them to create and deliver a dining experience that they themselves would appreciate and value.

Head chef, Lachlan Houghton works alongside and shares the vision of Birch with Glenn and Renee. An award-winning chef with extensive experience in some of Australia’s leading restaurants including Vue du Monde, Saint Crispin, Elements at Byron, Three Blue Ducks and Eschalot. He is an innovator, known for producing creative menus that deliver a complete dining experience. He is joined by a dedicated kitchen team including dynamo pastry chef, Lucy Matheson, who draws from her experience at Gazi, Vue Du Monde, Elements at Byron, Eschalot and Three Blue Ducks, to bring that creative and refined touch to all things pastry at Birch.
